The Proofer/Hot Cabinet features a non-insulated design with a removable bottom heater and wire universal slides that accommodate pans ranging from 12 in x 20 in to 18 in x 26 in, spaced on 4-1/2 in centers and adjustable in 1-1/2 in increments. It has a capacity for (11) 18 in x 26 in sheet pans or (22) 12 in x 20 in pans. Constructed from aluminum, this cabinet includes a field-reversible Lexan door, an integral drip trough, and (4) 5 in swivel casters (with 2 braked). It meets ANSI/NSF 4 and cCSAus standards.
