The Professional Dry Aging Cabinet is designed for commercial production of dry-aged meat, charcuterie, fish, and cheese. This one-section, reach-in unit can be set up as free-standing or integrated into other installations. With dimensions of 23-5/8"W and a capacity of 5.3 cu ft, it supports a load of up to 44 lbs. It features a lockable right-hinged double-pane glass door, which is reversible for convenience.
Equipped with a digital display, this cabinet maintains a precise microclimate, allowing for electronic control of temperature (32 °F to 77 °F) and relative humidity (60% to 90%) without the need for water or drain connections. It also utilizes the UX Airreg UVC sterilization system to ensure optimal airflow and air quality, while protecting the products from UV exposure.
Other highlights include LED interior lighting, auto defrost with condensation evaporation, and visual/audible alarms for enhanced monitoring. The interior is made of antibacterial polystyrene, featuring integral rack slides, while the exterior is constructed from durable stainless steel. The self-contained refrigeration system operates on R600a refrigerant and runs on 115v/60/1-ph at 2.0 amps. It is certified by cETLus and carries the ETL-Sanitation (UL/NSF-certified by Intertek) mark.
