The oven accommodates two GN 1/1 trays per rack, while the tempering cavity can hold two GN 1/1 and two GN 1/2 trays. Safety features include an antispark system, combustion shield, cooled flue, firebreak, and a hat, along with a smoke outlet vent and a lower vent with a handle regulator.
