The C5 3 Series Moisture Heated Holding & Proofing Cabinet features robust Red Insulation Armour and is designed for mobility with a full-height, insulated structure. It includes a clear polycarbonate door and a removable bottom mount control module for easy access. The thermostat allows for precise temperature settings up to 200 °F, and moisture control ensures optimal conditions for food storage. Equipped with universal wire slides on 3-inch centers, these can be adjusted in 1.5-inch increments, accommodating (18) 18-inch x 26-inch or (34) 12-inch x 20-inch x 2.5-inch pans. The cabinet rolls easily on 5-inch casters, two of which have brakes for added stability. Built from durable aluminum, it operates at 120v/60/1 phase, with a power output of 2000 watts and 16.7 amps. It also meets cULus and NSF standards.
